This is because it doesn’t taste of said *beetroot but rather (yawn) like *spinach However it is highly prized by chefs as it is reputed to taste superior to spinach…I might put that to the test this week. Best to eat the younger leaves although all are edible all year round. Also dubiously associated with curing *tumors by ancient physicians but I wouldn’t advise relying upon that.
