I used my pumpkin spice cookie recipe and my gingebread cookie recipe to make each of these fall cookies. The sliced log cookies are my favorite of the group! I brought them to the grand opening of Hudson Valley Lumber, which is my dad's and brother's new retail space here in Kingston, NY (it's part of SAW Moulding which my dad has owned for over 40 years!).To make these, I rolled a thin log of gingerbread cookie dough and placed it inside layers of pumpkin spice cookie dough with cinnamon and sugar in between. The outside layer is gingerbread. I used these two doughs to get variations in the color to look like the rings of a tree (I used red oak as my inspriation!). After chilling the log, I sliced it with a piece of thread. Using a knife just squished it down, so thread is the way to go for these cookies! I wanted the edges to be a little bit darker, so I brushed them with Chefmaster airbrush food coloring with a brush from Chua Cookie.
